Amber Candy Sugar ferments out completely, like it’s lighter brother but adds a little caramel and prune flavor. Lightens body, but increases alcohol percentage and adds color/flavor. Used most often in darker Belgian styles like Dubbels and Quads.
Light Candy sugar lightens body, color, and increases alcohol percentage. It also gives a drying sensation to beers without adding flavor or aroma. Mostly used in Belgian Trippels, and other strong Belgian ales.
